Plant Based Alfredo

(simple & kid approved)

My kids devoured this pasta!! My 5yr said

“Mommy you have to make this pasta every time it’s the next day you make pasta” lol. Not only was it delicious but it was a great way to get my kids to eat some not so “kid friendly” vegetables.


Trust me I know how hard it can be to get your children to eat different veggies. My children can’t stand mushrooms so that was my personal Win for this recipe. I also added in some spinach and asparagus as well as fresh tomato. My 9yr said the texture of the mushrooms reminded her of chicken

and didn’t taste like mushrooms at all.

What’s the trick? Chop it all up!!


Ingredients


- 16oz (1lb) Fettuccine Pasta

- 2 -15.5oz Jars Alfredo sauce (No Dairy)

- 1 bundle Fresh Asparagus

- 8oz Fresh Mushrooms

- 5oz Fresh Spinach

- 2 Tomatoes chopped

- 1 Fresh jalapeño chopped (optional)

- 1 Avocado sliced (optional)

- Olive Oil

- Garlic Powder

- Onion Powder

- Pink Himalayan Salt

- Black Pepper


How to Prepare

1. Start water to boil pasta. Be sure to add salt to prevent pasta from sticking.


2. Chop mushrooms & Asparagus. I did not chop my spinach but you can if you like. Do not mix the veggies yet you will cook them each individually. So keep them in separate bowls for now.


3. Season each veggie with about 2tbs olive oil, garlic powder, onion powder, salt and pepper.


4. In a skillet sauté mushrooms until they are tender and dark in color


5. Sauté or Steam your asparagus in a pot until they are nice and tender.


6. Sauté or Steam your spinach until it shrivels up.


7. Strain your pasta and add about 1/2 a jar of sauce, stir the pasta


8. Add in your mushrooms, 1/2 jar of sauce, stir


9. Add in your spinach, 1/2 jar of sauce, stir


10. Add in your asparagus, rest of sauce, stir.


11. Chop Fresh tomato and jalapeño


12. Put your pasta in a bowl with a nice big scoop of tomato and jalapeño on top.


13. Add some Avocado slices on the side.


14. If you’re preparing some for small children I suggest to stir the tomato topping into their bowl of pasta for them so it is well mixed.
